Lipid : Any group of large biological molecules including fats, phospholipids, and steroids that mix poorly, if at all, with water.
Phospholipid : A lipid made up of glycerol joined in two fatty acids and a phosphate group.
Steroid : A type of lipid characterized by a carbon skeleton consisting of four fused rings with various chemical groups attached.
Triacylglycerol : A lipid consisting of three fatty acids linked to one glycerol molecule; also called a fat of triglyceride.
Saturated : A fatty acid in which all carbons in the hydrocarbon tail are connected by single bonds.
Unsaturated : A fatty acid that has one or more double bonds between carbons in the hydrocarbon tail.
Hydrophilic : Having an affinity for water.
Hydrophobic : Having NO affinity for water
Trans Fat : An unsaturated fat, formed artifficially during hydrogenation of oil containing one or more trans double bonds
Wax : A dense, hard lipid-soluble ester of a long-chain alcohol and a fatty acid. (Hint: You take this out of your ears!)
